Auvergne green lentil AOP from Puy-en-Velay area (Haute-Loire), volcanic-soil-grown. Small dark-green-blue mottled lentil, very thin skin (does not break in cooking), distinctive firm holds-shape texture, characteristic peppery-mineral flavor — France's most prestigious lentil, AOP since 1996.
