Auvergne cow's milk pressed uncooked cheese (cheddar's ancestor), aged in three tiers: Cantal Jeune (30-60 days, mild and milky), Cantal Entre-Deux (3-6 months, balanced), Cantal Vieux (6-12+ months, intense and tangy). Pale ivory to amber paste with fudgy crumbly texture, evolving flavor from milky-grassy to sharply tangy-savory.
