Sobrasada de Mallorca is an uncooked, cured sausage produced across the whole island of Majorca, registered as a PGI under file number PGI-ES-0097. The paste is soft, compacted, greasy, and marbled red in appearance; the skin is dark red and smooth or slightly rough, with no mould or whitish mould only.
