À propos de cette appellation

Registered as a PGI on 21 June 1996 under file number PGI-FR-0190 (eAmbrosia identifier EUGI00000013206), Bœuf de Chalosse covers fresh meat from heifers, castrated males, and cows produced within the Chalosse geographical area: the hills of southern Aquitaine situated between the Gave de Pau and the Adour, restricted to the department of Landes and adjoining cantons. The specification sets minimum slaughter ages of 30 months for heifers or cows and 32 months for males, with a maximum slaughter age of 9 years. Carcases must meet defined requirements for weight, conformation, fat cover, and pH. Animals are raised on grass or with predominantly farm-produced fodder and are fattened with maize for a period of 6 to 12 months. Each animal is identified during rearing by a tag, and identity records are inspected as part of the control process. The applicant group is the Association Boeuf de Chalosse, based in Lourquen. The designated control body is LASO, Labels Agricoles du Sud-Ouest, based in Mont de Marsan. The product is labelled "Boeuf de Chalosse" together with the name and address of the certifying body. The reputation of the product is documented from the beginning of the nineteenth century.
