Normandy cow's milk butter from Isigny-sur-Mer area, AOP since 1986. Bright golden-yellow (highest in France, from beta-carotene of Normande cows on prés salés grass), distinctly creamy and rich, with characteristic hazelnut-floral notes and slightly higher fat than Charentes-Poitou. Iconic premium butter.

Premium pastry butter (extensively used in haute pâtisserie); beurre blanc and Normandy butter sauces; finishing butter; tableside butter service; ingredient in caramels Isigny.
