The Hojiblanca variety is the majority raw material, accounting for over 90 % of olives grown in the area. The oil must meet maximum acidity of 0,3 %, a maximum peroxide value of 10, and a median fruitiness score of 4 or above.

Registered as a PDO under file number PDO-ES-0327, with EU protection dated 26 November 2003, 'Antequera' designates extra virgin olive oil produced in seventeen municipalities of the Province of Málaga — including Alameda, Almargen, Antequera, Archidona, Campillos, Cañete La Real, Cuevas Bajas, Cuevas de San Marcos, Fuente de Piedra, Humilladero, Mollina, Sierra de Yeguas, Teba, Villanueva de Algaidas, Villanueva del Rosario, Villanueva del Trabuco and Villanueva de Tapia — and the municipality of Palenciana in the Province of Córdoba. The Hojiblanca variety, considered of local origin, must constitute the majority of the olives used; permitted minority varieties are Picual or Marteño, Arbequina, Picudo, Lechín de Sevilla or Zorzaleño, Gordal de Archidona, Verdial de Vélez Málaga and Verdial de Huévar. Oil must be extracted in registered mills within the production area using exclusively physical or mechanical procedures. Physico-chemical specifications require maximum acidity of 0,3 %, a maximum peroxide value of 10 meq oxygen per kg of oil, and a maximum K270 absorbency of 0,18. Organoleptic assessment must return a median fruitiness score equal to or greater than 4 and a median defect score equal to 0. Packaging must use dark glass, dark plastic, metal lined with food-grade material, or ceramic containers. All packaging must bear a numbered seal of warranty issued or checked by the Consejo Regulador de la DOP «Antequera», and labels must carry the wording 'Denominación de Origen Protegida Antequera' or the Designation logo together with the Union symbol.
