The designation covers extra virgin olive oil produced within the Autonomous Community of Valencia, spanning the provinces of Castellón, Valencia and Alicante. Only five varieties, all native to the defined geographical area, are permitted: Serrana at 20–40 %, Villalonga at 20–40 %, Farga at 10–25 %, Blanqueta at 10–25 %, and Morrudas at 5–10 %. No other olive variety may contribute to the oil. The specification requires acidity below 0,5°, a peroxide value below 15 meq O₂/kg, K270 below 0,15, K232 below 2,50, waxes at or below 250, delta K at or below 0,01, and a median of defects equal to zero. Oleic acid content must fall between 70 % and 82 % of total fatty acid content, and linoleic acid content must exceed 8 % of total fatty acid content. Organoleptic requirements specify a median for fruitiness greater than 3 and less than 6, and medians for pungency and bitterness each greater than 1 and less than 3, with the relationship between fruitiness and the other two attributes required to characterise the oil as balanced. Olive growing in the defined area is documented from Roman times, and trees exceeding 1 000 years of age are present in the Maestrazgo districts.
