Aceite Gata-Hurdes is a Protected Designation of Origin covering extra virgin olive oil produced exclusively from the Manzanilla Cacereña variety in a defined sierra region of northern Cáceres, Extremadura. The designation is monovarietal and permits no other olive variety. The oil is characterised by a golden yellow colour, sometimes with greenish shades, and a fruity, mild flavour with slight bitterness and a faint pungent aftertaste.

Registered as a PDO under file number PDO-ES-0121, with EU protection dating from 28 March 2000 and eAmbrosia identifier EUGI00000013573, Gata-Hurdes covers extra virgin olive oil obtained solely from fruit of the Manzanilla Cacereña variety grown within a defined area of sierras in the northern part of the province of Cáceres, Autonomous Community of Extremadura. The geographical area encompasses the natural areas of Sierra de Gata, Hurdes, Gabriel y Galán, Valle del Ambroz, Jerte and La Vera, comprising a total of 84 municipalities across an area of 449 430 ha, of which 30 329 ha are olive groves. Olive trees are cultivated on lower elevations and up to approximately 800 m. Olives must be picked directly from the tree and delivered to the oil mill no more than 12 hours after harvesting. Olives picked from the ground must be kept separate. Packaging must take place within the defined geographical area. Certified oil is identified by a numbered back label issued by the Consejo Regulador de la Denominación de Origen Gata-Hurdes, whose labels are printed by the Fábrica Nacional de Moneda y Timbre with continuous numbering to prevent duplication and forgery. The Manzanilla Cacereña variety accounts for 47 % of the total nationwide planting of that variety and has an oil content of approximately 15 % of wet matter.
