The specification sets maximum acidity at 0,7°, maximum peroxide value at 15 m O2/kg, maximum ultraviolet absorbency K270 at 0,15, maximum moisture content at 0,1%, and maximum impurities at 0,1%. The oil must be organoleptic-assessed as extra virgin. The geographical production area comprises 128 municipalities across the Provinces of Toledo and Ciudad Real, within the Autonomous Community of Castile-La Mancha, centred on the Montes de Toledo mountain range; 106 municipalities lie in the Province of Toledo and 22 in the Province of Ciudad Real. Oil must be stored in mills and bottling plants certified by the Fundación Consejo Regulador de la DOP Aceite de los Montes de Toledo, which requires separate bottling systems for protected designation of origin oils. Containers must be of glass, coated metal, PET, or vitrified ceramic. All labels must carry the designation logo and the words 'Denominación de Origen Montes de Toledo', and each container must bear a numbered seal of warranty, label, or secondary label issued by the inspection body, rendering it non-reusable.
