Extra-virgin olive oil produced exclusively within a defined area of north-eastern Cádiz province and four municipalities of Seville province, from eight permitted olive varieties led by Lechín de Sevilla. All production phases, including packaging, must take place within the geographical area. The oil presents an average to intense fruity aroma of green or mature olives with forest-fruit notes and a slightly bitter, spicy taste.

Aceite Sierra de Cádiz is registered as a PDO under file number PDO-ES-0219, with EU protection granted on 8 April 2004. The eAmbrosia identifier is EUGI00000013528. The designation covers only extra-virgin olive oil obtained from the fruit of Olea Europea L. by mechanical or other physical processes that do not lead to deterioration of the oil. The eight permitted varieties are Lechín de Sevilla, Manzanilla, Verdial de Huévar, Verdial de Cádiz, Hojiblanca, Picual, Alameña de Montilla and Arbequina; the specification identifies Lechín de Sevilla as the clear leading variety. The geographical area comprises eight municipalities in the province of Cádiz — Alcalá del Valle, Algodonales, Olvera, El Gastor, Setenil de las Bodegas, Torrealháquime, Puerto Serrano and Zahara de la Sierra — and four municipalities in the province of Seville: Algámitas, Coripe, Pruna and Villanueva de San Juan. The specification sets maximum acidity at 0,6°, a maximum peroxide value of 18 meq of active oxygen per kg, maximum ultraviolet absorbency (K270) of 0,20, and maximum moisture and impurities each at 0,1 per cent. All production phases, including packaging, are required to take place within the identified geographical area. The Consejo Regulador de la DOP «Sierra de Cádiz» manages the designation and issues back labels to packagers meeting the terms of reference; the bottled product must carry a back label supplied by the management body. Registered farms, mills and bottling plants must appear in the relevant registers held by the management body.
