The production area comprises sixteen municipalities in the Province of Jaén, Andalucía, situated in the central part of the southern zone of the province and surrounded by the Sierra Mágina Natural Park. Olive groves within the area cover a total of 64 009 ha, representing 84 % of the utilised agricultural area, and extend up to an altitude of 850 m. The authorised varieties are Picual and Manzanillo de Jaén; the Picual is designated the principal variety, and the protected oils must be prepared from olives of which not less than 90 % are of the Picual variety. The specification sets maximum limits of 0,5° for acidity, 18 for peroxide value, 0,20 for K 270, and 0,1 % for moisture and impurities. Only extra virgin olive oil receives the protection of the designation. Olives must be harvested carefully, with those from the ground separated from those from the tree, and the extraction process must be completed within a period of not more than 48 hours. Oils are subjected to physical and chemical analysis and organoleptic assessment before release. Authenticated oils carry a numbered back label issued by the Consejo Regulador de la Denominación de Origen «Sierra de Mágina», which also serves as the inspection body and satisfies European Standard EN45011.
