Anchoa de Santoña is a marketing term, not a legally protected designation; no European or Spanish quality register recognises it. It refers to semi-preserved anchovies associated with the Santoña area of the Cantabrian coast of Spain. A collective mark was established in 2004, providing a degree of commercial identity without conferring the legal guarantees of a protected designation.
