A white rice of the commercial category 'Extra', produced in the Ebro Delta within the Province of Tarragona, and belonging to the varieties Bahía, Tebre, Sénia, Fonsa, Bomba and Montsianell of the species Oryza sativa L. All varieties are distinguished by uniform cooking characteristics, homogeneous grains and a high concentration of starch in the centre of the grain, known as 'pearling'.

Arroz del Delta del Ebro, registered as a PDO under file number PDO-ES-0336 with EU protection dating from 11 March 2004, covers white rice of the commercial category 'Extra' belonging to the varieties Bahía, Tebre, Sénia, Fonsa, Bomba and Montsianell of the species Oryza sativa L. The most widely grown varieties are Bahía, Sénia and Tebre. The production area is confined to land suitable for rice-growing in the municipalities of Deltebre, Sant Jaume d'Enveja, L'Aldea, Amposta, L'Ampolla, Camarles and Sant Carles de la Ràpita, all within the Districts of Baix Ebre and Montsià in the Province of Tarragona. The area for milling and cleaning extends across those same municipalities up to the carretera nacional 340, except in Amposta, where the boundary is the A7 motorway. Rice must originate from holdings listed in the register kept by the Consejo Regulador de la DOP Arroz del Delta del Ebro and must belong to authorised varieties. At despatch, grains must be healthy, clean and dry, with no more than 15 % moisture content, and free from remnants of pericarp cuticles. Numbered labels and secondary labels are issued by the Regulatory Board and affixed in registered packing undertakings in such a way as to prevent re-use. Labels must bear the words 'Denominación de Origen Protegida "Arroz del Delta del Ebro" or "Arròs del Delta de l'Ebre"' together with the serial number. The inspection body is Calitax, Barcelona.

Tasting notes
Catalan rice DOP from Delta del Ebro (Tarragona), Bahía, Tebre, Bomba, Marisma varieties. Distinctive Bomba variety — small round grain, very high water-absorption capacity (3:1 ratio), holds shape well in cooking. Pearl-white grains, balanced starch profile.
