Tasting notes
Castilian-Leonese cured-smoked stuffed pork sausage IGP from El Bierzo (León). Made from various pork cuts (rib, tail, jaw) coarsely cut, seasoned with paprika, garlic, salt, stuffed in pork-large-intestine casing. Distinctive large irregular shape, deep red color, firm chewy texture, intensely smoky-savory pork-paprika flavor.
HoReCa use
**Foundation of Bierzo cuisine** — boiled with potatoes, cabbage, chorizo, in cocido berciano; classic León winter dish.
