Catalan green onion IGP from Tarragona (Valls), distinctive — green spring onion specifically grown for the **calçotada** (charred onion festival February-April). Long thin white-green onions, traditionally charred whole on grills, then peeled and dipped in romesco sauce. Mildly sweet flavor, smoky-charred from cooking.
