About this designation

Carne de Cantabria is a PGI covering fresh beef produced entirely within the Autonomous Community of Cantabria, which constitutes the full geographical area of the designation. Animals eligible for the designation are drawn from the Cantabrian family of breeds — Tudanca, Monchina and Asturian — as well as Parda de Montaña, Limousin, Pirenaica, Charolais, Blonde d'Aquitaine, Fleckvieh, and crosses thereof. Livestock must be born, bred, fattened, slaughtered, dressed and cut within Cantabria; no stage of production may take place outside the Autonomous Community. The specification defines six product categories — Ternera Blanca, Ternera, Añojo, Novilla, Buey and Vaca — each with prescribed slaughter age ranges, carcass conformation classes, fat-cover grades and meat colour characteristics. Post-slaughter, carcasses must be aired for at least 24 hours and pH must be lower than 6. For Ternera Blanca and Ternera, at least 50 % of the diet after weaning must come from fodder produced in Cantabria. For Buey and Vaca, animals must graze for at least two seasons. The finishing stage may not exceed four months for any category. All half-carcasses must carry an identifier incorporating the PGI logo. Packaged meat must bear numbered labels affixed at cutting plants. Commercial labels must be submitted to the Oficina de Calidad Alimentaria (ODECA) and must feature the wording Indicación Geográfica Protegida 'Carne de Cantabria'.
