The defined geographical area lies at the meeting point of the provinces of Albacete, Almería, Granada, Jaén and Murcia, within the Cordilleras Béticas Orientales, characterised by a minimum altitude of 500 metres, and encompasses a total of 144 municipalities. Lambs must be born and reared until slaughter within this area. Feed consists of ewes' milk, reserved exclusively for the lambs, supplemented with products rich in fibre and plant-based food supplements; no other feed basis is permitted. Carcasses must fall within a bled weight of 9.0 to 13.0 kg (without head or offal), achieve conformation class R or O, carry a fat-cover degree of between 2 and 3, and meet Category B or C first-quality classification under EU sheep-carcase classification rules. Authenticity is established through indelible ink markings bearing the PGI logo applied to both half-carcasses from neck to rump, together with a numbered label affixed to one rear limb showing weight and the PGI logo. Cut parts carry a numbered label bearing the PGI logo.
