The designation covers asparagus sold fresh or in tins, distinguished from all other commercial green asparagus varieties, which belong solely to Asparagus officinalis L.

Registered as a PGI on 1 December 1997 under file number PGI-ES-0056, Espárrago de Huétor-Tájar covers green asparagus produced from the local variety designated "Espárrago Verde Morado de Huétor-Tájar" or "Morado de Huétor", classified botanically as Asparagus maritimus Mill. x Asparagus officinalis L. and known in Spanish as espárragos trigueros. All other commercial green asparagus varieties sold worldwide belong to Asparagus officinalis L.; the specification permits no other variety for this designation. The specification defines the appearance of the spears as straight and cylindrical, with anthocyanin colouring — purple, bronze-purple, bronze, green-purple or green — present in both stalk and tip. The tip is pointed or tapered and wider than the rest of the stalk (spear-shaped), and the spears carry small spurs under the bracts; faint lines may be visible on the skin. The diameter range is generally between 4 mm and 16 mm. The organoleptic properties required by the specification include a tender, meaty and supple texture when fresh; the stalks must be sufficiently flexible to be bent at least 70° without breaking, a characteristic not found in garden asparagus of Asparagus officinalis L.
