Dry-cured hams and shoulder hams produced from pure-bred Iberian or Iberian-Duroc cross pigs reared on dehesa pastures in Extremadura and Andalusia and processed exclusively within 31 municipalities of the district of La Sierra in the province of Huelva. The designation is divided into three classes according to breed purity and diet, with the trotter retained on all products.

Registered as a PDO under file number PDO-ES-0009, with EU protection dating from 24 August 1996, the designation was originally recorded as 'Jamón de Huelva' and renamed 'Jabugo' by amendment effective 27 March 2017. The eAmbrosia identifier is EUGI00000013414. Raw material must come from pure-bred Iberian pigs or Duroc crosses carrying at least 75 % Iberian blood. Three classes are defined. Class I — 'Summum' — requires 100 % Iberian pigs fed exclusively on acorns and natural dehesa resources during the mast-feeding period and slaughtered at a minimum age of 14 months. Class II — 'Excellens' — requires pigs with 75 % Iberian blood meeting the same feeding and slaughter-age conditions. Class III — 'Selección' — requires pigs with at least 75 % Iberian blood fattened on dehesa resources and grain-and-legume feed, slaughtered at a minimum age of 12 months. Minimum production periods are 600 days for hams under 7 kg, 730 days for hams of 7 kg or more, and 365 days for shoulder hams. Slaughter, butchery, salting, washing, resting, drying and maturing must all take place within the 31 specified municipalities of La Sierra, Huelva. Each ham or shoulder ham must carry a numbered seal affixed at the slaughterhouse and a numbered badge affixed on leaving the maturing cellar; the badge must display the product class. The control body is the Consejo Regulador de la Denominación de Origen Protegida 'Jamón de Huelva', now operating under the name Denominación de Origen Protegida 'Jabugo'.

Andalusian Iberian dry-cured ham from Sierra de Aracena (Huelva), the most prestigious Iberian ham DOP. From 100% Iberian pig (or Iberian × Duroc cross) raised in dehesa (oak meadow), with Bellota grade fed exclusively on acorns during montanera season (October-February). Aged minimum 24 months, often 36-48+. Deep ruby meat with marbled golden-yellow fat (intra-muscular oleic acid from acorns, the "Pata Negra" signature), dense buttery-firm texture that melts at body temperature, intensely complex flavor: nutty-buttery base evolving to umami-savory mid-palate with sweet-floral finish, hints of dried fruit, walnut, hazelnut, oak — Spain's most prestigious gastronomic product.
