Lenteja de La Armuña is a PGI registered under file number PGI-ES-0102, granted EU protection on 21 June 1996. The designation covers dried lentils of the single authorised variety, Rubia de La Armuña, grown and packed within a defined area of 756 square kilometres comprising 34 municipalities in the District of Armuña, north of the Province of Salamanca. Lentils must be grown on registered parcels and harvested mechanically once sufficiently ripened. After harvest they are stored on clean, dry premises with measures taken to prevent outside contamination. They are then hulled, cleaned, selected, and graded by size before packing at registered packing plants within the production area. Quality checks, including analysis of cooking properties, are carried out. Foreign bodies and defective seeds are removed prior to packing. The specification notes that the soils of the area are deep, fertile, neutral or slightly alkaline, brown and reddish-brown, with sufficient quantities of calcium and potassium, and that the continental climate, with little precipitation, long cold winters, and short hot dry summers, provides conditions particular to this variety. The Comité de Certificación adscrito al Consejo Regulador de la Indicación Geográfica Protegida «Lenteja de La Armuña» acts as the inspection body. All packaging must carry a guarantee seal and numbered labels or secondary labels issued by the Consejo Regulador, affixed at the registered warehouse or packing plant in a manner that prevents reuse. Commercial labels must be approved by the Consejo Regulador and must bear the words Indicación Geográfica Protegida 'Lenteja de La Armuña'.
