Miel de Granada is a Protected Designation of Origin honey produced exclusively within the province of Granada, Andalusia, Spain. The specification establishes general physical and chemical characteristics applicable to all varieties at the time of packaging and labelling: moisture content must be ≤ 17,5 % and hydroxymethylfurfural must be ≤ 18 mg/kg. Each recognised variety is further defined by conductivity, colour, and pollen content thresholds. Chestnut monofloral honey requires conductivity ≥ 0,8 mS/cm, colour ≥ 80 mmPfund, and pollen content ≥ 75 % from Castanea sativa. Rosemary monofloral honey requires conductivity ≤ 0,25 mS/cm and colour ≤ 35 mmPfund. Thyme monofloral honey requires conductivity ≥ 0,3 and < 0,8 mS/cm and colour ≥ 55 mmPfund. Avocado monofloral honey requires conductivity ≤ 0,7 mS/cm and colour ≥ 100 mmPfund. Orange blossom monofloral honey requires conductivity ≤ 0,3 mS/cm and colour ≤ 30 mmPfund.
