Each type must meet specific pollen thresholds: monofloral lavender honey must contain lavender pollen above 10 %; monofloral rosemary honey must contain rosemary pollen at or above 15 %; multifloral honey must contain a combined total of thyme, savory, rosemary, and lavender pollen at or above 5 %. All types are subject to physico-chemical limits including moisture content at or below 17.5 %, hydroxymethylfurfural at or below 15.0 mg/kg, free acidity at or below 35.0 meq/kg, and electrical conductivity at or below 0.62 mS/cm. Packaging must take place within the production area, in clear transparent glass containers with a hermetic seal and a maximum net content of 1 kg; containers may not be reused. Each unit must bear a numbered label issued by the Regulatory Board of the Miel de La Alcarria designation of origin, checked by the inspection body, together with a guarantee seal and a commercial label stating the type of honey by botanical origin.
