The defined geographical area covers the province of Burgos in its entirety. All stages of preparation and production must take place within that area, including preparation of the lard or tallow and onion, mixing of ingredients, stuffing of the casing, and cooking and airing of the blood sausages. Where the product is sold in portions, slicing must also take place within the defined area. The basic ingredients are onion of the 'Horcal' variety, rice, blood, lard or tallow, spices and salt. The 'Horcal' onion is described in the specification as an indigenous variety, flattened spherical in shape, with a diameter of at least 80 mm and a weight greater than 100 g. The rice must be dry, whole-grained, of Japanese varieties such as 'Bahía' or 'Bomba', and of 'Extra' or 'Primera' class. Blood may be from sheep, cow or pig. The essential spice is black pepper; paprika, oregano, cumin, cloves, garlic, cinnamon, caraway, parsley and aniseed are optional. The finished product has a diameter between 30 mm and 150 mm and a length between 100 mm and 400 mm. Every cut or package released for consumption must bear a seal of guarantee carrying the designation logo, the terms 'Indicación Geográfica Protegida' and 'Morcilla de Burgos', the EU symbol for protected geographical indication, and an identification number. The seal must be affixed so that it cannot be re-used. The applicant group is the Asociación IGP Morcilla de Burgos.
