Pasas de Málaga

Pasas de Málaga are sun-dried raisins produced exclusively from the Muscat of Alexandria variety of Vitis vinifera L., known locally as Moscatel Gordo or Moscatel de Málaga, grown and dried within a defined area of the Province of Málaga, Andalucía. The specification requires natural sun-drying, manual turning of the bunches, and moisture content below 35 % with sugar content above 50 % by weight.

Registered as a PDO under file number PDO-ES-0849, with EU protection dating from 24 January 2011 and eAmbrosia identifier EUGI00000013976, Pasas de Málaga are produced exclusively from ripe fruit of the Muscat of Alexandria variety of Vitis vinifera L., also known as Moscatel Gordo or Moscatel de Málaga. Both production and packaging must take place within the defined geographical area, which covers named municipalities in the Axarquía district of eastern Málaga province and a further group of municipalities in the Manilva area at the western end of the Málaga coast. Artificial drying is not permitted; bunches must be exposed directly to the sun and turned manually each day to ensure even drying. The removal of berries from the dried bunches, known as picado, is performed by hand using specially adapted scissors or by machine in factories. The specification sets chemical limits: moisture below 35 %, sugar content above 50 % by weight, acidity between 1.2 and 1.7 % expressed as tartaric acid, pH between 3.5 and 4.5, and water-soluble solids above 65 °Brix. There must be fewer than 80 fruits per 100 grams net. All packaging must bear the PDO logo, the words 'Denominación de Origen Protegida' and 'Pasas de Málaga', and a unique code for each unit. The applicant body is the Consejo Regulador de las DOPs «Málaga», «Sierras de Málaga» y «Pasas de Málaga».
