The protected product is the fruit of Capsicum annuum L. of the Bierzo ecotype — a population genetically belonging to the variety but morphologically and physiologically adapted to the Bierzo district — sold roasted and packaged. Fresh peppers must be triangular and elongated in shape, longer than 10 cm and wider than 6 cm, with a unit weight over 160 grams and a pericarp thickness averaging less than 8 mm. Peppers with green patches are rejected. Pepper cultivation must take place within the defined geographical area, comprising the municipalities of Arganza, Bembimbre, Borrenes, Cabañas Raras, Cacabelos, Camponaraya, Carracedelo, Carucedo, Castropodame, Congosto, Cubillos del Sil, Molinaseca, Ponferrada, Priaranza, Sobrado, Villadecanes-Toral de los Vados, and Villafranca del Bierzo. There is no geographical restriction on where roasting takes place. Roasting is performed on a metal grill plate or in an oven heated with firewood or gas. The entire process — roasting, and removal of stalks, membranes, and skin — is carried out by hand. No chemical solutions are used and the peppers are not washed with water. All packaging released for consumption must bear a numbered label issued by the Consejo Regulador and affixed at the registered packing plant. Certified undertakings must display the words 'Indicación Geográfica Protegida Pimiento Asado del Bierzo' together with the Regulatory Board's logo.
