Queso de Murcia fresco is a fatty, lightly pressed, uncooked and unaged cheese; it must weigh between 250 g and 3 kg, with a maximum diameter of 200 mm and a maximum height of 120 mm, a minimum fat content of 45 % of dry matter, minimum protein of 32 % of dry matter, minimum dry matter of 40 %, and a minimum pH of 6.5. Its sides bear the imprint of esparto matting used in production. Queso de Murcia curado is a fatty, pressed, uncooked cheese that undergoes maturation; it must weigh between 250 g and 2.6 kg, with a maximum diameter of 190 mm and a maximum height of 100 mm, a minimum fat content of 45 % of dry matter, minimum protein of 32 % of dry matter, minimum dry matter of 55 %, and a minimum pH of 5 when taken out of the brine. The raw milk must come from Murcian goats on farms within the geographical area, with a minimum fat content of 4.7 %, minimum protein of 3.4 %, minimum total dry extract of 13.4 %, and a minimum pH of 6.5. All stages of milk production, cheesemaking, and maturation must take place within the defined area. Each cheese must bear a secondary label issued by the control body of the Consejo Regulador de la DOP Queso de Murcia, carrying the PDO logo and attached so that it cannot be reused.
