About this designation

Registered as a PDO on 22 April 2005 under file number PDO-ES-0260, Sidra de Asturias protects two products: natural cider and cider. Both are obtained from partial or total alcoholic fermentation of fresh apples or apple must sourced from varieties traditionally grown in the Autonomous Community of the Principality of Asturias, which constitutes the entire designated area of production and bottling. The authorised apple varieties are classified into eight technological groups: sweet, bitter-sweet, bitter, semi-acid, semi-acid-bitter, bitter-semi-acid, acid, and acid-bitter. The minimum alcohol content by volume for both products is 5%. Natural cider is produced without the addition of sugar and contains only carbon dioxide of endogenous origin; cider may incorporate CO2 recovered solely from the fermentation process and a small quantity of sugar syrup. For cider, volatile acidity must remain below 2.0 g/l acetic acid, total sulphur dioxide below 200 mg/l, and carbon dioxide pressure in the bottle at 20°C must exceed 3 atm. For natural cider, total sulphur dioxide must remain below 150 mg/l and carbon dioxide pressure in the bottle at 20°C must exceed 0.5 atm. Bottling must take place within the designated area. Certified products are marketed under a numbered control label issued by the Consejo Regulador de la Denominación de Origen Protegida (DOP) Sidra de Asturias, which complies with standard EN-45011. Labels must display the name Sidra de Asturias and indicate whether the product is cider or natural cider.
