About this designation

Ternera de Aliste is a PGI covering fresh meat and offal from young cattle of breeds selected for meat performance and adapted to the Aliste geographical area of western Zamora, Spain. Animals are slaughtered between 8 and 12 months of age. Two production types are defined by the specification: milk-fed animals, which are kept in stalls from birth and are not weaned before slaughter, and grass-fed animals, which graze with their mothers before a second stage in stalls. Feed must be of plant origin and must be mainly cereal, with a minimum of 60 % of its quantitative composition, and may not exceed 50 % of the annual dry matter. The use of products that could interfere with normal growth and development is expressly forbidden. Permitted carcass conformation classes are E, U, R and O; the permitted fat cover is 2 or 3 for males and 2, 3 or 4 for females. The minimum maturation period for the meat is 4 days. Colour ranges from light pink in milk-fed animals to pink to red in grass-fed animals.
