Ternera Gallega
Also known as: Rubia Gallega beef
Fresh meat and offal from cattle of the Galician blond and Galician brown breeds and their crosses, reared, fattened, slaughtered and cut within the region of Galicia. The designation covers three marketing categories — Ternera Gallega Suprema, Ternera Gallega, and Baby-beef — distinguished by the age of the animal at slaughter and the system of production.
About this designation
Ternera Gallega is a Protected Geographical Indication covering fresh meat and offal from cattle of the Galician blond and Galician brown breeds and their crosses, as well as cattle resulting from crosses with the Asturiana de los Valles, Limousin and Blonde d'Aquitaine breeds. Males of any breed crossed with heifers of the Friesian and brown Swiss breeds are also eligible. The entire region of Galicia constitutes the defined geographical area, and the birth, rearing, fattening, slaughter and cutting of carcasses must all take place within that area. Three marketing categories are recognised. 'Ternera Gallega Suprema' covers animals slaughtered before the age of 10 months that have been reared with their mothers and fed on their mother's milk for no less than 7 months. 'Ternera Gallega' covers calves taken from their mothers at different ages and fed on fodder and concentrates authorised by the Consejo Regulador. 'Baby-beef' covers animals slaughtered after the age of 10 months but before the age of 18 months. Concentrated feed must be of plant origin; cereals must represent a minimum of 60 % of exclusively cereal grain, or a minimum of 65 % of cereal grain and derivatives, in the total weight of the feed. Frozen certified carcasses, quarters or pieces no longer qualify for the designation. All operators must be registered at the Consejo Regulador. Carcasses, pieces and portions carry colour-coded labels bearing the name and logo of Ternera Gallega, the PGI European logo and traceability information.
