The production and ageing area coincides with the production areas of the Designations of Origin 'Jerez-Xérès-Sherry' and 'Manzanilla — Sanlúcar de Barrameda'. Raw material is restricted to 'suitable wines' sourced from producers located within that area, obtained exclusively through acetous fermentation of those wines. Three ageing categories are defined by the specification. Vinagre de Jerez carries a minimum ageing period of six months; Vinagre de Jerez Reserva a minimum of two years; and Vinagre de Jerez Gran Reserva a minimum of 10 years. Ageing proceeds by the criaderas y soleras system in oak barrels known as botas. The specification sets distinct analytical thresholds for each category: total acetic acid content must be at least 70 grams per litre for standard Vinagre de Jerez and at least 80 grams per litre for Gran Reserva; residual alcohol must not exceed 3 % by volume, or 4 % for Pedro Ximénez and Moscatel types. Ash content must fall between 2 and 7 grams per litre, with Gran Reserva required to fall between 4 and 8 grams per litre. Two semi-sweet sub-types exist: Vinagre de Jerez al Pedro Ximénez, to which Pedro Ximénez wines are added during production, and Vinagre de Jerez al Moscatel, to which Moscatel wines are added. These sub-types must contain at least 60 grams per litre of reducing material from the respective wine variety. The Consejo Regulador de las DOPs «Jerez-Xérès-Sherry», «Manzanilla-Sanlúcar de Barrameda» y «Vinagre de Jerez» is the applicant and producer group responsible for the designation.
