Vinagre del Condado de Huelva

A wine vinegar produced by acetous fermentation of wine certified by the Condado de Huelva Designation of Origin, made from the native Zalema grape variety. It encompasses three subcategories, including unaged and two aged types, with the aged types enriched during ageing with liqueur wines and quality liqueur wines from the same Designation of Origin.

Vinagre del Condado de Huelva is registered as a PDO under file number PDO-ES-0724, with EU protection granted on 15 October 2008, and is recorded in eAmbrosia under identifier EUGI00000013882. The control body is the Consejo Regulador de las DOPs «Condado de Huelva», «Vinagre del Condado de Huelva» e IG «Vino Naranja del Condado de Huelva». The raw material is white wine certified by the Condado de Huelva Designation of Origin, produced principally from the Zalema grape variety, which the specification describes as native and exclusive to the defined geographical area. All protected vinegars must attain a minimum total acetic acid content of 70 g/l, a soluble dry extract of not less than 1.30 g/l per percentage point of acetic acid, an acetoin content of not less than 100 mg/l, and a proline content of not less than 300 mg/l. Chromatic analysis by transmission colorimetry must yield a maximum clarity value of 93 % and a colour intensity expressed by the chroma greater than 20 units. The designation covers three product types: Vinagre Condado de Huelva, an unaged vinegar with residual alcohol of not more than 0.5 % vol; Vinagre Viejo Condado de Huelva Solera, aged by the traditional criaderas y soleras method for no less than six months; and Vinagre Viejo Condado de Huelva Reserva, aged by the same method for no less than twenty-four months. A fourth type, Vinagre Viejo Condado de Huelva Añada, is aged by the traditional Añadas method for no less than thirty-six months in casks or vats, using wines of a single vintage with no blending permitted. Ageing takes place in American oak casks or vats in rooms maintained at between 15 and 18 °C with a relative humidity of between 60 % and 80 %.
