Calisson d'Aix-en-Provence

Calisson d'Aix-en-Provence carries no EU protected designation. It is a traditional French confection from Aix-en-Provence made from a paste of almonds and candied melon, formed into a distinctive lozenge shape with a white royal-icing surface.
