Registered as a PGI under file number PGI-FR-0034, with EU protection dating from 16 January 1997 and eAmbrosia identifier EUGI00000013435, Canard à foie gras du Sud-Ouest (Chalosse, Gascogne, Gers, Landes, Périgord, Quercy) covers products derived exclusively from the male Muscovy duck or the male Mulard duck. The specification requires that the duck be reared in the open air as free-range before force-feeding begins: from the age of 81 days for the Mulard duck and from the age of 82 days for the Muscovy duck. Force-feeding must last a minimum of 10 days and comprise a minimum of 20 meals. The skin and fat of the duck must be off-white to yellow in colour. Raw foie gras must be supple and homogeneous in colour, free of lesions, and must weigh at least 350 g. Each magret must weigh at least 300 g, be presented with skin and subcutaneous fat, and have a fat content (fat plus skin relative to total weight) of between 25 % and 45 %. Of the entrails and offal, only the liver, heart and gizzard may be sold separately under the designation. All operations from rearing to packaging must take place within the defined geographical area. The sub-zone names Chalosse, Gascogne, Gers, Landes, Périgord and Quercy may each appear on labelling.
