Registered as a PDO on 24 September 2015 under file number PDO-FR-01375 (eAmbrosia identifier EUGI00000015895), Lucques du Languedoc designates a whole green table olive produced solely from the Lucques variety. The geographical area covers western Aude and the eastern part of Hérault, as delimited by a specific list of cantons and municipalities defined by the Institut national de la statistique et des études économiques Official Geographic Code of 1 January 2015. Cultivation is restricted to altitudes not exceeding 400 metres. The olives must be harvested manually and are debittered using an alkaline solution by the method of reduced lactic fermentation; the density of the solution and the immersion time vary according to the olives used. The product is marketed in chilled or pasteurised brine. Where pasteurisation is carried out, it must take place within the geographical area. Authorised sizes may not exceed 37 fruits per 100 grams, and batches must be uniform in size and colour. Olives exhibiting specified defects — including wrinkled fruit, damage caused by the olive fruit fly, and olives turning colour — may not exceed 3 % of the olives in any batch. Production, harvesting, and processing must all take place within the defined geographical area. The specification records sensory parameters: firmness of at least 2,5, fibrosity of no more than 3,5, and crunchiness of at least 2, each on a 10-point scale using the International Olive Council sensory analysis method.
