Miel des Cévennes is produced by bees from the nectar of flowers within the Cévennes geographical area. The designation covers both polyfloral honey, characterised by a prevailing mixture of nectar from several plants typical to the region, and monofloral honeys: heather honey (tree heather — Erica arborea, bell heather — Erica cinerea, and common heather — Calluna vulgaris), chestnut honey, raspberry honey and blackberry honey. The pollen spectrum of every type must contain at least one of the following regional marker species: tree heather, bell heather, common heather, chestnut, willowherb, raspberry, dandelion, blackberry and white clover. Pollen from crops not specific to the Cévennes region — such as sunflower, rapeseed, alfalfa and lavender — may only be present as isolated pollen, at less than 15 %. The specification sets a hydroxymethylfurfural content of less than or equal to 15 mg/kg at the end of the production year, and a water content of less than or equal to 19 %, with common heather honey permitted a water content of less than or equal to 21 %. The production year runs from August to December, except for common heather honey, for which it runs from October to December.
