Registered as a PGI on 20 June 2005 under file number PGI-FR-0475 (eAmbrosia identifier EUGI00000013763), Petit Épeautre de Haute Provence covers einkorn wheat of the species Triticum monococcum grown, stored, and husked within a delimited zone of 235 municipalities, or parts thereof, situated at altitudes above 400 metres across the départements of Alpes de Haute Provence, Hautes Alpes, Drôme, and Vaucluse. The specification requires crop rotation, prohibits the use of chemical and synthetic products, and restricts fertilisation to a maximum of 60 units of nitrogen, 60 units of potash, and 60 units of phosphorus per hectare. Sowing takes place in summer and autumn, and seed must originate from within the geographical area. The maximum grain yield, husk on, is 40 quintals per hectare. After harvest, the grain is stored in its husk within the geographical area and must be husked by specialist operators there; husking may take place up to 2 years after harvesting. Husked grain must meet a minimum specific weight of 77 kg/hl, a moisture content of no more than 14 %, and a protein content greater than 10.5 %. The use-by date of husked grain is 18 months from the date of husking. Each batch label must carry the husker batch identification code, net weight, use-by date, and packager details. The inspection body is ULASE, Organisme Certificateur, based in Loriol-sur-Drôme.
