Registered as a PGI on 21 June 1996 under file number PGI-FR-0164 (eAmbrosia identifier EUGI00000012947), Volailles d'Auvergne covers poultry carcases produced within the region of Auvergne, comprising the départements of Allier, Puy-de-Dôme, Haute-Loire and Cantal, and adjacent districts. The specification requires pure or crossbred slow-growing stock, limited stocking density in buildings, open-air rearing, cereal-based feed, and a minimum slaughter age defined for each type of poultry. Carcases are graded at the abattoir. Products may be marketed fresh or frozen, whole (oven-ready or with giblets) or in sections, with the exception of festive poultry, which may not be sold in sections. Traceability is maintained through a documentary chain covering hatcheries, feed producers, breeders and abattoirs; records include breeder declarations, delivery slips for day-old chicks, departure declarations for the abattoir, carcase collection receipts, and declarations of labels used and downgraded poultry. All labels are numbered. Control is exercised by AUCERT, based in Clermont-Ferrand, and SYNDIM. Each product bears the designation Volailles d'Auvergne, the name of the specific poultry type, and the name and address of the certifying authority. The applicant groups at registration were SYVOFA and SYNDIM (Comité Auvergne), together with Couvoir Ker Avel.
