Anthotyros

Anthotyros carries no EU protected designation and appears in no official quality register. It is a generic Greek whey cheese produced in two distinct styles: a fresh form (Frescos) and a dried, aged form (Xeros). As a style rather than an origin-defined product, the name is not restricted to any particular region or producer.
