Tasting notes
Greek hard cow's-or-mixed-milk cheese POPs (gruyere-family, named "Graviera" from "Gruyère"). Aged 3+ months. Pale ivory paste, firm dense texture with small eyes, balanced sweet-nutty-savory flavor — Greek hard cheese tradition. **Graviera Naxou** (Cyclades island, mostly cow milk) is among the most renowned; **Graviera Kritis** (Crete, sheep-and-goat milk) has more pronounced flavor; **Graviera Agrafon** (mainland mountain) is artisanal.
HoReCa use
Greek tyrokomeio (cheese course); **saganaki** (pan-fried); **bougatsa** (cheese pie variations); grated on pasta and gratins; with melon and ham.
