Tasting notes

Greek hard sheep-and-goat-milk cheese POP from Macedonia and Thessaly. Aged 3+ months, pasta-filata-style stretched-curd preparation. Pale ivory paste, firm chewy texture (like a firmer mozzarella), mild buttery flavor.

HoReCa use

**Saganaki** (pan-fried until golden, doused in lemon and brandy — flambé service is popular in tourist tavernas); melted in tyropita and Greek-style sandwiches.
