Tasting notes
Aegean Chios island mastic-resin POP, distinctive — aromatic resin from Pistacia lentiscus var. chia trees, harvested as "tears" (drops). Bright pale-yellow translucent crystals, distinctively aromatic with characteristic pine-cedar-camphor-anise notes — Greece's most unique culinary product, no comparable EU equivalent.

**Foundation of unique Greek confectionery and pastry** — in mastic-flavored ice cream, glyko-tou-koutaliou (spoon sweets), traditional mastic loukoumi (Greek delight); aromatic in liqueur (mastiha liqueur); in chewing gum (the original use); rare savoury applications in modern Greek alta cocina.
