Mizithra
Also known as: Xynomizithra, Mitzithra Kritis
Mizithra POP carries no EU protected designation. The catalogue entry covers a generic Greek whey cheese produced in fresh or salt-dried form, traditionally made from sheep and goat milk whey. The fresh version is soft and white; a dried, salted variant develops a firmer, crumbly texture. The designation describes a style rather than a defined geographical origin.
Tasting notes
Cretan fresh whey-cheese POPs, sheep-and-goat-milk whey. Bright white, soft to crumbly texture (Frescos vs. Xynomyzithra aged tangy version). Mild fresh tangy flavor or assertively sour aged variant.
HoReCa use
Mizithra is used in Cretan tyrokomeio preparations, served with honey and pomegranate, incorporated into dakos (Cretan rusk salad), and used as a pastry ingredient.
