Georgios, Ag. Fotia, Praissos, Mitatos, Akhladia, Krya, Chrysopiyi, Stavrokhorio, Ag. Stefanos, Pefka, Apidia, Skopi, Hamaizio, Mouliana, Mesa Mouliana, Myrsini, Tourloti, Sfaka, and Lastro — together with the town of Sitia, all within the province of Sitia in the Prefecture of Lasithi. The specification requires that olives be grown and processed exclusively within this area. Treatment of the olive fruit fly is restricted to ground-level spraying or biological methods. Processing takes place in traditional or centrifugal olive mills. The inspection body is the Agriculture Directorate of the Prefecture of Lasithi, located in Ag. Nikolaos, Lasithi, Crete. Authenticated products carry the label designation "Olive Oil PDO Sitia Lassithi Crete" together with a control number comprising a label serial number and the last two digits of the year of production.
