Amarene Brusche di Modena is a PGI-protected sour cherry jam produced within a defined area of the Province of Modena and adjoining municipalities in the Province of Bologna. The specification requires a minimum fruit content of 70 % fresh fruit, a refractive index at 20 °C of between 60° and 68° Brix, and a pH of between 2.5 and 3.5.

The designation covers a jam produced from sour cherries grown and processed within a geographical area comprising municipalities in the Province of Modena — including Vignola, Castelvetro di Modena, Modena, Carpi and Spilamberto among others — together with neighbouring municipalities in the Province of Bologna, including Bazzano, Crevalcore and Vergato among others. The permitted raw material varieties are Amarena di Castelvetro, Amarena di Vignola dal peduncolo corto, Amarena di Vignola dal peduncolo lungo, Amarena di Montagna, Amarena di Salvaterra, Marasca di Vigo, Meteor, Mountmorency and Pandy. The finished jam must contain 70 % fresh fruit, have a refractive index at 20 °C of between 60° and 68° Brix, a pH of between 2.5 and 3.5, and a minimum sugar content of 60 %. The specification prohibits the use of thickeners, colorants or preservatives; concentration is achieved by thermal evaporation. Both cherry cultivation and jam production, including packaging, must take place within the defined geographical area. The product is packaged in jars or tins of specified volumes: 15 ml, 212 ml, 228 ml, 236 ml, 314 ml, 370 ml, 2 650 ml and 5 000 ml, with the two largest sizes reserved for wholesale. The PGI logo consists of a letter 'A' incorporating a sour cherry with stalk and leaf in place of the crossbar, set within a 74 × 74 mm square, with the words AMARENE BRUSCHE DI MODENA I.G.P. below.
