All steps from planting to harvesting must take place within this area. The specification permits the following varieties: Precoce d'Argenteuil, Larac, Dariana, Cumulus, Darbella, Vittorio (ex AM 840), Voltaire, and Zeno. Other cultivars may be present up to a maximum of 20 % of the planting area. Shoots must be completely white and are classified into two categories — Extra and Premium — each subdivided into two diameter classes ranging from 8 to 24 mm. All shoots must measure between 20 and 22 cm in length. After harvesting, shoots must be delivered to the processing centre within 12 hours. Bundles must weigh between 0.5 kg and 3 kg; loose packages must not exceed 5 kg. Each label must indicate the category and diameter class, bear the words 'Asparago Bianco di Cimadolmo' and 'Indicazione Geografica Protetta' or 'IGP', display the guarantee seal containing the PGI logo, and carry the EU symbol. The managing body is the Consorzio dell'Asparago Bianco di Cimadolmo I.G.P.
