About this designation

Canino is a protected designation of origin for extra virgin olive oil produced in a zone comprising the municipalities of Canino, Arlena di Castro, Cellere, Ischia di Castro, Farnese, Tessennano, and parts of Tuscania and Montalto di Castro, all in the province of Viterbo. The oil must be obtained entirely or partially from the following olive varieties: Caninese and its derived clones, Leccino, Pendolino, Maurino, and Frantoio, present alone or in combination; other varieties present in the olive groves may also be used, provided they account for not more than 5%. All production steps — growing and harvesting the olives and extracting the oil — must take place within the defined geographical area. At release for consumption, the oil must display a colour described as emerald green with golden highlights, a total maximum acidity expressed as oleic acid not exceeding 0,5 g per 100 g of oil, and a peroxide value not exceeding 10 mEq O₂/kg. The oil must be packaged within the production area in glass, ceramic, or metallic containers with a maximum capacity of 5 litres. The label must carry the word 'Canino' in lettering larger than all other writing, accompanied by the Union's PDO symbol. The year of production of the olives must be indicated on the label.
