Cantuccini Toscani and Cantucci Toscani are PGI-protected Tuscan baked biscuits made from a dough of wheat flour, whole unpeeled sweet almonds, eggs, butter, honey, and sugar, shaped into a characteristic semi-oval form by diagonal cutting of the baked dough log. Each piece weighs a maximum of 15 grams. All production and packaging must take place within the administrative territory of Tuscany.

Registered as a PGI on 11 December 2014 under file number PGI-IT-01290 (eAmbrosia identifier EUGI00000015959), the designation covers two co-protected names: Cantuccini Toscani and Cantucci Toscani. The geographical area is the entire administrative territory of the region of Tuscany. The specification mandates that all stages of production, from working the ingredients to baking the dough logs, take place within that area; packaging must also be carried out there. For each kilogram of dough, the specification requires wheat flour; whole unpeeled natural sweet almonds with a maximum relative humidity of 8.5%, at a minimum proportion of 17% in the dough, sufficient to yield a minimum of 20% per kilogram of finished product; pasteurised hen's eggs and egg yolks with a minimum of 3% yolks; at least 1.5% butter; between 20 and 40% caster, crystallised, or pearl sugar; and between 0.3 and 1.5% all-flower honey in addition to the sugar, plus raising agent as required. The use of powdered eggs or powdered egg yolks is not permitted. Sliced almonds, crushed almonds, and almond flour are not permitted. No other ingredient, additive, colouring, or preservative is authorised. At the point of sale, each piece must not exceed 10 cm in length, 3 cm in height, and 2.8 cm in width, with a relative humidity of between 3% and 7%. Labels must carry the protected name, the designation Indicazione Geografica Protetta in full or as IGP, the EU PGI symbol, producer and packager details, and the product logo. The applicant body is the Consorzio per la tutela dei Cantucci/Cantuccini Toscani IGP.
