Cartoceto

Cartoceto is a PDO-registered extra virgin olive oil produced in a defined area of the Province of Pesaro e Urbino, Marche. It is made principally from the Raggiola, Frantoio and Leccino varieties, which together with permitted minor varieties must account for the whole of each grove's composition. The specification sets maximum acidity, peroxide values, minimum polyphenol content, and a minimum panel-test score.

The protected name is 'Cartoceto'. The production area lies within the Province of Pesaro e Urbino in the Marche Region and comprises the communes of Cartoceto, Saltara, Serrungarina and Mombaroccio, together with a defined part of the commune of Fano bounded by the Flaminia national highway to its junction with the Adriatica national highway on the south side and the administrative boundary on the north side. The oil must be produced exclusively from olives grown, crushed and bottled within this area. The principal varieties are Raggiola, Frantoio and Leccino, which must represent not less than 70 % of each grove jointly or individually; the minor varieties Raggia, Moraiolo and Pendolino are permitted up to a maximum of 30 %. Cropping must not be prolonged beyond 25 November each year, and crushing must occur within 48 hours of cropping. The yield may not exceed 18 kg per quintal of olives. The specification requires maximum acidity of 0.5 % expressed as oleic acid, maximum peroxides of 12 meq O₂/kg, total polyphenols of not less than 100 mg/kg, an oleic/linoleic acid ratio of not less than 8, and a panel-test score of not less than 7. The ripasso method and the use of chemical or biochemical products during extraction are prohibited. The oil must be stored in stainless steel casks under nitrogen until bottled and sold in glass containers of capacity not exceeding 5 litres. The inspection body is Agroqualità s.r.l., Rome. The applicant group is the Consorzio di tutela e valorizzazione dell'olio extra di oliva Cartoceto.
