The specification defines the meat mixture in decreasing order of proportion: belly up to 70%, shoulder up to 40%, and ham and loin trimmings up to 30%. The finished product is presented as a cylinder of soft consistency weighing between 400 and 2,500 g, with a diameter of between 4.5 and 10 cm and a length of between 15 and 45 cm. Chemical requirements include a pH of 4.8 or higher, a minimum protein content of 15.00%, fat content between 32% and 42%, a maximum water-to-protein ratio of 3.10, and a maximum fat-to-protein ratio of 2.80. The product must be packed in natural pig or bovine gut with ends tied using hemp string. Eligible pig breeds include Italian Large White, Landrace and Duroc crosses as improved under the Italian herd book; pure-bred Belgian Landrace, Hampshire, Pietrain, Duroc and Spotted Poland animals are expressly excluded. Pigs are sent to slaughter between the end of the ninth month and the end of the 15th month, with an average live weight of 170 kg. The label must carry the name 'CIAUSCOLO' followed by 'Indicazione Geografica Protetta' and the initials 'IGP'. The Consorzio di Tutela del Ciauscolo IGP is the applicant producer group.
