Ciliegia dell'Etna is a fresh sweet cherry registered as a PDO under file number PDO-IT-0572, with EU protection granted on 23 November 2006 (eAmbrosia: EUGI00000013946). The designation covers fruit of the Prunus avium L. Mastrantonio (Donnantonio) ecotype, grown on the slopes of Mount Etna, Italy. Minimum fruit weight is 7 g; two sales classes, Extra and First Class, are defined by weight.
Tasting notes
Sicilian cherry from Etna slopes, predominantly Mastrantonio and Donnagiovanna varieties. Bright red to dark crimson, firm flesh, sweet-acid balance with characteristic mineral notes from volcanic soil.
HoReCa use
Fresh fruit service in summer, in seasonal desserts (cheesecake, panna cotta), preserves, granita, pairing with ricotta.
